    I've never had any poultry come out looking like that and I've been cooking on a uds since 06.
    You've got something bad going on. Turkey should look like it came out of the oven, not like the exhaust pipe of a diesel truck.

    any pictures of your perfect cooking? I think my wood could of been soaked longer. the meat was really good. thanks for the heads up.
